Who should drink Kombucha?

Kombucha is a fermented tea drink. Due to fermentation, small amounts of alcohol can be produced. In addition, depending on the tea used, kombucha can contain caffeine.

But how exactly does alcohol form in kombucha? How high can the alcohol content be? And what should pregnant women, breastfeeding mothers, and parents be aware of? Here you will find the most important information about kombucha during pregnancy and kombucha for children.

How does alcohol form in Kombucha?

The fact that small amounts of alcohol can be produced in kombucha is a natural consequence of fermentation.

A SCOBY contains a community of various yeasts and bacteria. During fermentation, yeasts metabolize some of the sugar contained in the sweetened tea. This produces, among other things, ethanol and carbon dioxide.

Certain bacteria in the kombucha culture can, in turn, metabolize a portion of the resulting ethanol further into organic acids. This interplay, along with other fermentation processes, contributes to the characteristic sweet and sour taste of kombucha.

How much alcohol is ultimately contained in the finished kombucha depends, among other things, on the culture, recipe, temperature, oxygen supply, fermentation duration, and storage.

How much alcohol does Kombucha contain?

The alcohol content of kombucha can vary depending on the production method. Especially with homemade kombucha, a reliable alcohol value cannot be determined solely by the fermentation time.

Culture, sugar content, temperature, oxygen supply, fermentation duration, and storage all influence the fermentation process. Without proper measurement, the actual alcohol content of a self-fermented kombucha cannot therefore be reliably determined.

In commercially produced kombucha, on the other hand, the alcohol content can be monitored through controlled production processes and corresponding analyses.

Kombuchery, due to its production, contains only small amounts of alcohol, with a maximum of 0.5% by volume.

Can pregnant women drink Kombucha?

Kombucha can contain small amounts of alcohol. Since it is generally recommended to abstain from alcohol during pregnancy, pregnant women should consider this when consuming kombucha.

In addition, kombucha is made from tea and can therefore contain caffeine, depending on the type of tea used.

Fermented foods can have varying tolerability for people with histamine intolerance. With kombucha, too, composition and individual tolerability can vary.

Therefore, it cannot be generally stated that every person with histamine intolerance must fundamentally avoid kombucha. Those who react sensitively to fermented foods or have a diagnosed histamine intolerance should consider individual tolerability and, if necessary, clarify open questions with a medical professional or nutritionist.
